12/20/2023 0 Comments Sourdough Thumb print cookies12/12/2023 1 Comment Fruit Cake11/24/2021 0 Comments Sweet Potato casseroleI decided to do something different with sweet potatoes this year. 6 Sweet potatoes peeled and cubed 1/2 cup of brown sugar 1 tsp vanilla 1/2 cup melted butter 1 tsp of salt 2 eggs Crumble 1/4 cup sugar 1 cup crushed pecans 1/2 tsp cinnamon 1/4 tsp nutmeg 1 Tbsps. cold butter 1 Tbsps. flour Marshmallow Topping 2 (13 oz.) jars of marshmallow fluff Preheat the oven to 400 degrees F. Boil the potatoes until tender, once tender and mash the potatoes until smooth. Now stir in the brown sugar, vanilla, eggs, salt and butter the set it aside. In a medium bowl mix the sugar pecans, cinnamon, nutmeg, butter and flour until it resembles course crumbs. In a casserole dish layer in the potato mixture, the crumble, and then the marshmallow fluff. when finished top the casserole with the remaining fluff and bake for 15 to 20 minutes or until golden brown. 3/4/2021 2 Comments Apple Sauce This is a great healthy snack, not too much sugar, or preservatives, the boys loved it. 12 Red Delicious apples peel and cored 2 teaspoons of cinnamon 1/2 cup of honey 2 cups of water Slice the apples and place them into a crock pot. Coat the apples in cinnamon and honey, pour in the water and give them a quick stir. Place the lid on; cook on high until the apples are tender. Once tender, use a potato masher and mash the apples. Now ladle the mashed apples into a blender and blend until smooth. Pour the apple sauce into an air tight container and refrigerate. 10/29/2020 0 Comments Pumpkin Cream cheese muffinsI'm not usually a big pumpkin person, but theses are soo good, but of my boys were fight'n over them. Cream cheese filling:
16 oz. of cream cheese 1 cup of powder sugar 3 Tablespoons of milk 1 teaspoon of vanilla Crumble: 1/4 cup of brown sugar 1/2 a teaspoon of cinnamon 1/2 a cup of flour 1/2 a cup of crushed pecans 3 Tablespoon of butter Pumpkin muffins: 2 1/2 cups of flour 2 cups of pumpkin puree 2 eggs 1/2 cup of melted butter 1/4 cup of milk 2 teaspoons of baking powder 2 teaspoons of baking soda 1 1/2 cups of sugar 1 1/2 cups of brown sugar 1 teaspoon of salt 2 teaspoons of vanilla 1 teaspoon of cloves 1 teaspoon of nutmeg 1 teaspoon of ginger 1/2 teaspoon of cinnamon Cut the cream cheese into small cubes and place into a large bowl. Now cream the powder sugar, cream cheese; then add the vanilla and milk, Blend them to together until you get stiff peaks. Now gently ladle the filling into ice cube trays and freeze for a couple of hours. In a medium bowl combine the brown sugar, cinnamon, flour, crushed pecans, and butter, mix it all together until it clumps, and set it aside. Preheat your oven to 350 degrees F In a large bowl, mix together the butter, pumpkin puree, eggs, vanilla, and milk. Add the flour, salt, sugar, brown sugar, baking powder, baking soda, cloves, nutmeg, ginger, and cinnamon; mix until completely incorporated. Ladle a little less then half into the liner, then gently push the frozen cream cheese filling into the center. Now top with the crumble and bake for 25 to 30 minutes or until golden brown. 7/26/2020 0 Comments Banana Chocolate chip muffinsThese are moist, soft, and toddler approved. 1 1/2 cups of flour 1/4 cup of sugar 2 teaspoons of baking powder 1 teaspoon of baking soda 1/2 teaspoon of salt 1 teaspoon of vanilla 2 eggs 1/2 cup of milk 1/2 cup of melted butter 4 mashed bananas 2 cups of chocolate chips Preheat oven to 350 degrees F In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; get it a quick stir. Then add the vanilla, eggs, milk, butter, and bananas mix together until everything is incorporated. Now gently fold in the chocolate chips. Lastly pour into a greased muffin pan and bake for 15 - 25 minutes or until golden brown. 4/12/2020 4 Comments Chocolate Coffee cakeThis combines two of my favorites chocolate and coffee yum. 2 1/2 cups of flour 1 teaspoon of baking powder 1 teaspoon of baking soda 1/2 a cup of unsweetened cocoa powder 1 1/2 cups of sugar 1/4 cup melted butter 1 tsp vanilla 1/4 teaspoon of salt 1 1/2 cups of milk 1/4 cup of brewed coffee 1/2 cup of sour cream 2 eggs Topping 3 Tablespoons of flour 3 Tablespoon of unsweetened cocoa powder 2 Tablespoons of butter 1 cup of sugar 1/4 cup of brewed coffee 1 cup of milk 1 teaspoon of vanilla Preheat to 350 degrees F. In a large bowl mix together the flour, sugar, salt, baking powder, baking soda, un sweetened cocoa. Now add the butter, milk, coffee, vanilla, sour cream, and eggs; blend until everything is incorperated. Pour into a greased bunt pan and bake for 35-40 minutes until completely done in the middle. Once done set it aside to cool. To make the topping, combine the flour, cocoa powder, butter, sugar, coffee, milk, and vanilla into a medium sauce pan and cook over medium heat until it thickens, stirring occationally. Once it thickens take it off of the heat and set it aside; Gently pop the cake out of the pan and place it onto a tray. Using a ladle pour the topping over the cake a little bit at a time, the cake will absorb most of it. Set it aside and let it cool until ready to serve. 4/11/2020 1 Comment Fried Banana pudding Oh sweet Jesus, this is heaven on a spoon, sweet, creamy heaven. 3 bananas sliced 2 Tablespoons of brown sugar 1/4 teaspoon of cinnamon 1/4 cup of butter 2 Tablespoons of honey Pudding 2 Tablespoons of flour 1 cup of sugar 2 Tablespoons of butter 4 egg yolks 3 1/2 teaspoons of vanilla 2 1/2 cups of milk 1/4 teaspoon of salt Crumble crushed graham crackers Pudding In a medium pot, cook the flour, sugar, butter, egg yolks, vanilla, milk, and salt over medium heat until it starts to thicken; stirring so that it doesn't burn. Once pudding has thickened, remove from heat and pour into a baking dish, then set it aside. Fried Bananas In a large skillet over medium heat, cook the brown sugar, butter, honey and cinnamon. Once the sugar is dissolved and butter is melted add the bananas and coat them in the mixture continue to cook until the bananas are tender. Now take the bananas off of the heat and ladle over the pudding. Top with crushed graham crackers and let cool before serving. 4/3/2020 2 Comments Blueberry Citrus poke cakeThis cake has a very light and refreshing taste. 2 1/2 cups of flour 2 teaspoons of baking powder 2 teaspoons of baking soda 1 teaspoon of salt 1 1/2 cups of sugar 1/2 of melted butter 1/2 of milk 2 egg whites beaten 1 teaspoon of vanilla 1/2 cup of orange juice 1/4 cup of lemon juice 12 ounces of blue berries Topping: 3 Tablespoon of flour 1 cup of sugar 2 Tablespoons of butter 3 eggs 1/2 cup of milk 1 teaspoon of vanilla 1/4 teaspoon of salt 4 Tablespoons of lemon juice 4 Tablespoon of orange juice Pre heat oven to 350 degrees F In a large bowl, combine flour, sugar, salt, baking powder, and baking soda. Stir until combined, now pour in the milk, melted butter, vanilla, eggs, lemon juice, and orange juice, mix until everything is incorporated. Next gently fold in the blueberries. Then you will pour the batter into a greased 9 x 13 baking dish, and bake for 35 to 40 minutes or until the cake is completely done in the middle. Once done set it aside and let it cool. To make to topping; combine the flour, sugar, butter, eggs, milk, vanilla, salt, lemon juice, and orange juice, and cook over medium heat, stirring it, until it starts to thicken. Take it off of the heat and set it aside; using a straw poke holes into your cake and SLOWLY pour the topping over the cake. Chill it until you are ready to serve. |
