I have a lot of fond memories when Ben and I were newly weds, we would go to this wing place every Thursday and get 60 cent wings, and I wanted to try my hand at making my own. 1 lbs. chicken wings 1½ cups of flour 1 teaspoon of salt and pepper 2 eggs 1 cup of milk oil for frying Sauce 1/4 cup of Tabasco sauce 1/4 cup of Louisiana hot sauce 1 teaspoon of Worcestershire sauce 2 teaspoons of chili powder 2 teaspoons of paprika 1 teaspoon of vinegar 3 Tablespoons of butter 3 Tablespoons of flour 2 teaspoons of garlic powder In a large pot heat your oil over medium- high heat Using a large bowl, mix the egg and milk. Now soak your chicken in the milk mixture for 5 minutes. In a bowl or Ziploc bag mix the flour sat, and pepper. Take the chicken out of the wet mixture and place in the dry and thoroughly coat the chicken. Now carefully place the chicken into the hot oil and cook until internal temp. is 165℉. Once the chicken is done set it aside and remove the hot oil. In a medium pan over medium heat add the butter, flour, chili powder, paprika, and garlic powder. Once the butter is melted pour in the Tabasco, Louisiana, and Worcestershire sauce; give it a quick stir and let it simmer for 5 - 10 minutes and then coat the wings in the sauce, serve with ranch and a smile.

9/4/2020 0 Comments Chicken pot pieThe chicken is juicy and the vegetables so tender, a great dish to prep and freeze for later. 2 pie crusts 4 boneless chicken breasts 1 cup of chicken broth 1/4 cup of milk 2 diced carrots 2 peeled and chopped potatoes 1 Tablespoon of butter 1 Tablespoon of flour 1 teaspoon of salt 1 teaspoon of pepper 2 chopped celery 1/4 of diced onion 2 teaspoons of parsley 2 teaspoons of rosemary 1 teaspoon of thyme Preheat the oven to 375 degrees F In a large pan over medium heat cook the chicken and set it aside. Now in the same pan add the butter and let it melt. Once the butter has melted pour in the onion, carrots, potatoes, and celery; give a stir and sprinkle in the flour, then add the chicken and stir. Next add the salt, pepper,parsley, rosemary, thyme, broth and milk, stir until combine; cover and bring it down to simmer. Roll out your first crust into a pie plate, take the chicken and vegetables off of the heat and ladle into pie crust. gently roll the second pie crust on top, pinching the edges together and scoring the middle, now coat the top with melted butter and bake for 35 minutes or until golden brown and vegetables are tender. 8/18/2020 0 Comments Chicken and GravyThis is slap ya mama good, with creamy gravy and tender, juicy chicken. 3 boneless chicken breast cooked white rice 1 Tablespoon of garlic salt 1 Tablespoon of onion powder 1 Tablespoon of parsley 1 Tablespoon of salt 1 Tablespoon of pepper 2 Tablespoons of oil Gravy: chicken drippings 2 Tablespoons of flour 2 teaspoons of salt 2 teaspoon of pepper 2 teaspoons of parsley 2 cups of chicken broth In a large skillet over medium- high, heat the oil. Using a small bowl combine onion powder, garlic salt, salt, pepper, and parsley. Season the chicken breasts with the seasoning mixture. Now gently place the chicken into the hot oil and cook until done in the middle. Set the chicken aside to cool. While the chicken cools, take the pan off of the heat and place a medium pot over medium heat, then pour in the chicken drippings and stir in the flour. Allow the mixture to cook until brown; pour in the chicken broth and whisk until it starts to thicken. Now add the salt, pepper, and parsley. Continue stir until every thing is incorporated. Take the gravy off of the heat and set it a side. The chicken should be cool enough to shred. Place a portion of rice into a bowl, then place the shredded chicken onto. Now drizzle some of that gravy on top of the chicken and enjoy. 3/28/2016 0 Comments Chicken quartersQuarters are a lot easier than a whole chicken. 2 chicken quarters 2 tablespoons unsalted butter melted 1 tablespoon of basil 1 tablespoon rosemary 1 tablespoon parsley A dash of bay leaves salt and pepper to taste Preheat the oven to 375 degrees F In a 13 x 9 casserole dish (I like to line my pans with foil to make less of a mess) place the chicken quarters. Pour the melted butter, rosemary, Basil, parsley, and bay leaves over top of the chicken. Cover with foil and bake for 30 minutes to an hour, half way through take the foil off and allow the chicken to finish cooking until brown and skin is crisp. |
