Peach Preserves

The boys really enjoy fresh fruit, so I thought this would a nice treat to have on their toast in the morning. 

 8 peaches peeled, pitted and sliced
2 cups of sugar
​½ cup of brown sugar
1 teaspoon of vanilla
1 Tablespoon of lemon juice









An easy way to peel the peaches is to the top and blanche them, when you go to slice them make sure to scoop out the dark pieces at the center or you'll have crunchy pieces in your preserves.

In a large pot over medium heat, add the sugars, vanilla, and lemon juice; the mixture until the sugars are dissolved. Now scoop in the peaches, stir them and coat them in the sugar mixture as much as possible. turn the heat up and bring it to a boil for 20 minutes, then take it off of the heat. Give it a stir and let it rest for 10 minutes. Now repeat the process until the mixture reaches 212℉. Once that is done carefully scoop the hot mixture into a clean jar with an air tight lid and let it cool, then refrigerate. 

Note: to seal the jars use the water bath method.
