The wonderful lady that we get our beef from gave us some
ox tail to try and it was so good.
Ingredients:
2 lbs. of Ox( or beef) tail ½ a cup of baby carrots 2 celery stalks chopped 2 potatoes peeled and chopped ¼ onion diced 1 clove of minced garlic 2 teaspoons of dried rosemary 2 teaspoons of parsley salt and pepper to taste 2 cups of beef broth 1 cup of stout beer 6 oz. of tomato paste In a large bowl mix together beef broth tomato paste and and beer, mix it until the tomato paste is no longer clumped, now place the ox tail into the mixture and let it marinate for 3 hours. In a Dutch oven add the carrots, celery, and potatoes. Add the ox tail and marinate to the pot, then add the rosemary, parsley, salt and pepper. Bring to a boil over medium high heat for 5 to 10 minutes, then let simmer for 2½hours, serve with a biscuit or a roll.
