4/14/2022 0 Comments Smoothie squeeze pouchesI'm always looking for way to incorporate healthy snacks into my kids day. The boys love those pouches with fruit puree in them but they are chalked full of sugar and preservatives. So whenever I make purees for Fiona I've been setting some aside for the boys to make smoothies with. Squeeze station Squeeze pouches 3 apples 1 cup of blueberries 4 strawberries 1 carrot 1 cup of milk You're going to peel and chop the apples and carrots, the boil them until tender. Once tender strain the apples and carrots, scoop them into a blender. Now add the blueberries, strawberries, and milk, then blend until smooth. After you assemble your squeeze station and pouches, care pour the smoothies into the pouches screw the cap on and chill until ready to eat. Squeeze Station

3/25/2022 1 Comment Papa John's BrisketLet me tell you something about my grandpa's brisket, it is legendary back home, that's how good it is, one time he grabbed the cinnamon instead of the chili powder and nobody notice, that's how good he is. I was inspired and a little nervous, so I hope y'all enjoy this little taste of my childhood. 2lb. brisket trimmed 2 teaspoons of chili powder 3 teaspoons of garlic powder 3 teaspoons of onion powder 2 teaspoons of thyme 2 teaspoons of meat tenderizer 3 teaspoons of paprika 3 teaspoons of cumin 1 cup of A1 steak sauce 1 cup of Heinz 57 1 1/2 cups of honey BBQ sauce plus extra for basting Line a baking dish with foil, then place the brisket inside. In a small bowl combine the chili powder, garlic powder, onion powder, thyme, meat tenderizer, paprika, and cumin. Now you're going to coat the entire brisket with the spices. In a medium bowl combine the A1, Heinz 57, and BBQ sauce, pour this mixture over the brisket, be sure coat the entire thing with the sauce mixture. Cover the brisket and let it sit in the fridge for 2 days. Now pre heat your oven to 275 degrees F. Take the brisket out, and cook it for 4 to 6 hrs. OR until the internal temp. 180 degrees and baste it ever hour. DO NOT over cook it. Once the brisket is done take it out and place it on the counter and let it rest for 15 to 20 mins before cutting into to it. 1/11/2022 2 Comments Venison StewBen and his dad finally processed the deer, he had shot a couple of months ago. So I decided to put some in a stew. 1 lb. venison stew meat. 1 medium potato cubed 2 carrots diced 1 (14) can of diced tomatoes 2 celery stocks chopped 2 tsp. of garlic salt 2 teaspoons of rosemary 2 tsp. of thyme 2 tsp. of parsley 1/2 an onion diced 2 Tbsp. of flour 2 Tbsp. of Worcestershire sauce 2 cups of beef broth 1 cup of water Over medium heat, brown the stew meat. Now add the onions, potatoes, celery, and carrots. Sprinkle in the flour, garlic salt, rosemary, thyme, and parsley then stir. Now we are going pour in our broth, water, Worcestershire sauce and diced tomatoes, then bring it to a boil for 5 to 10 minutes. After let it simmer for an hour or until vegetables are tender. 12/10/2021 0 Comments Cranberry Apple butter A smidge tart, but another win on the toddler front. 12 oz. of whole cranberries 6 gala apples peeled and cored 1 tsp. of cinnamon 1/2 tsp of nutmeg 1 1/2 cups of water 1 1/2 cups of honey Chop up the apples and add them to a large pot with the cranberries, cinnamon, nutmeg, and honey. Stir it until everything is mixed then pour in the water, an bring to a boil for 15 to 20 mins or until the cranberries burst. Now lower the heat and let it simmer for a hour. Lastly using a blender, blend the mixture until smooth. Pour into a container with a lid a let it cool. 12/4/2021 0 Comments Firehouse ChiliI decided to call this fire house chili to honor my husband, who enjoys spicy food, this my version of a Texas chili. 2 (6oz.) cans of tomato paste 2 lbs. of ground beef 1 tsp. of Cajun seasoning 2 tsp. of Tabasco 1 Tbsp. of sugar 1 jalapeno minced 1 tsp. of garlic salt salt and pepper to taste 2 1/2 cups of beef broth or water 1 Tbsp. Worcestershire sauce 3 tsp. chili powder 2 tsp. paprika 1 1/2 tsp cumin 14 oz. smoked sausage minced In a large pot over medium heat, brown the beef. Once browned drain the grease and add the sausage and jalapeno stir and let it cook for about five minutes. Now add the spices and letting it cook for a minute or two. Next add the Tabasco, Worcestershire sauce and tomato paste, give it a quick stir before adding the broth/water. Bring the chili to a boil for five to ten minutes; stirring occasionally. Then lower the heat and let simmer for a hour, I like to serve it with corn bread and butter. 11/24/2021 0 Comments Sweet Potato casseroleI decided to do something different with sweet potatoes this year. 6 Sweet potatoes peeled and cubed 1/2 cup of brown sugar 1 tsp vanilla 1/2 cup melted butter 1 tsp of salt 2 eggs Crumble 1/4 cup sugar 1 cup crushed pecans 1/2 tsp cinnamon 1/4 tsp nutmeg 1 Tbsps. cold butter 1 Tbsps. flour Marshmallow Topping 2 (13 oz.) jars of marshmallow fluff Preheat the oven to 400 degrees F. Boil the potatoes until tender, once tender and mash the potatoes until smooth. Now stir in the brown sugar, vanilla, eggs, salt and butter the set it aside. In a medium bowl mix the sugar pecans, cinnamon, nutmeg, butter and flour until it resembles course crumbs. In a casserole dish layer in the potato mixture, the crumble, and then the marshmallow fluff. when finished top the casserole with the remaining fluff and bake for 15 to 20 minutes or until golden brown. 9/30/2021 0 Comments Baked RigatoniThis was relatively easy and quick to make and the flavors came together beautifully. 16 oz. of rigatoni pasta 1 lb. ground beef 1 lb. ground pork 24 oz. of pasta sauce 2 teaspoons of sage 2 teaspoons of pepper 2 teaspoons of Thyme 2 teaspoons of oregano 2 teaspoons of parsley 2 teaspoons of onion powder 2 teaspoons of salt 2 teaspoons of garlic salt 8 oz. of shredded mozzarella Preheat oven to 400 degrees F In a medium pot boil the pasta until tender. In a large bowl combine your beef, pork, and spices. Once mixed together cook the meat mixture in a skillet over medium heat. Now add the sauce and lower the heat to a simmer. In a greased casserole dish layer in the pasta, cheese, and meat until the pan is full top with meat sauce and more mozzarella, bake in the oven until the cheese is completely melted. once melted set aside to cool, serve with garlic bread. 9/20/2021 0 Comments Ham and 3 bean Soupwith Fall around the corner and with the weather starting to get cool in some parts of the country. Its starting to be soup weather. 2 cups of cooked white beans 2 cups of cooked red beans 2 cups of pinto beans 3 cups chopped ham steak 2 teaspoons of sage 2 teaspoons of Thyme 2 teaspoons of Parsley salt and pepper to taste 3 chopped green onions 2 teaspoons onion powder 2 teaspoons of garlic salt 3 cups of chicken broth 2 1/2 cups of water In a large pot over medium heat cook the onions and ham. Once the onions are tender, stir in the beans; now add the sage, parsley, thyme, onion powder, garlic salt, salt and pepper. Now pour in the broth and water, give it quick stir, then bring it to a boil. Once at boil turn the heat down and simmer for an hour. Server with cornbread or biscuits. 3/4/2021 2 Comments Apple Sauce This is a great healthy snack, not too much sugar, or preservatives, the boys loved it. 12 Red Delicious apples peel and cored 2 teaspoons of cinnamon 1/2 cup of honey 2 cups of water Slice the apples and place them into a crock pot. Coat the apples in cinnamon and honey, pour in the water and give them a quick stir. Place the lid on; cook on high until the apples are tender. Once tender, use a potato masher and mash the apples. Now ladle the mashed apples into a blender and blend until smooth. Pour the apple sauce into an air tight container and refrigerate. 2/25/2021 0 Comments Tomato SauceThis lovely sauce is great with spaghetti, pizza, or meatballs. 6 tomatoes quartered 1 chopped onion 3 cloves of garlic 2 teaspoons of of basil 2 teaspoons of oregano 2 teaspoons of salt and pepper 1 teaspoon of sugar 1 Tablespoon of oil Preheat oven to 400 degrees F Line a cookie sheet with foil, in a large bowl place tomatoes, garlic, and onions. Coat them with with oil, then add the basil, salt & pepper, sugar and oregano. Place the mixture on to the cookie sheet and bake for 30 to 35 minutes, or until tender. Once done place all the items into a blender and blend until smooth. Store in an air tight container and keep refrigerated. |
