12/6/2019 0 Comments Pumpkin Pie I'm not usually a big fan of pumpkin, but this pie is smooth, creamy and not overly sweet. 1 (15oz) of pumpkin puree 1/4 cup of brown sugar 1 teaspoon of ground cinnamon 1/4 teaspoon of ground nutmeg 1/4 teaspoon of ground ginger 1/4 teaspoon of ground cloves 2 (9 inch) graham cracker crusts 1 teaspoon of salt 1/2 a cup of melted butter 1 teaspoon of vanilla 2 eggs beaten 1/4 cup of heavy cream 1 (14oz.) can of sweetened condensed milk Preheat the oven to 375 Degrees F In a large bowl, combine brown sugar, cinnamon, nutmeg, cloves, ginger, and salt. In a medium bowl, mix the butter, vanilla, eggs, heavy cream, and sweet condensed milk. Add the wet ingredients to the dry. Whisk until the lumps are gone Pour into the crusts and bake for 30-45 minutes, or set in the middle.

11/20/2019 0 Comments Cookie dough Cheesecake Rich and creamy Crust 1/4cup of melted butter 1 1/2 cup of crushed graham crackers Cheesecake 16 oz. of cream cheese 3/4 cup of sugar 2 Tablespoons of flour 1/2 cup of sour cream 2 teaspoons of vanilla 2 eggs 1/2 lb. of raw chocolate chip cookie dough (cut into small chunks) Chocolate sauce 1 Tablespoon of butter 1 cup of chocolate chips Preheat oven to 350°F In a medium bowl, combine the butter and graham crackers, set it aside; line a spring form pan with parchment paper, and press the graham cracker mixture into the pan then bake for 15 minutes. Cream the cream cheese, sour cream, and sugar. Now stir in the vanilla, flour, and eggs. Continue to mix until lumps are gone. The graham cracker crust should be done at the point, take it out and set it aside. Grease the side of the pan with non stick spray, and gently pour the cheesecake batter into the pan, sprinkle the chunks of cookie dough on top and let it sink. Place the cheesecake into the oven and bake for 30 minutes or set in the middle. Set it aside to cool. To make the sauce, melt the butter and then stir in the chocolate until the chips are melted (sometimes I stick it in the microwave to finish melting it) Now pour the sauce over the cheesecake. Cover the pan and chill until ready to serve. 10/20/2019 0 Comments Almond upside down cakeThis is a light and fluffy cake, and would go very well with vanilla ice cream. Topping: 1/2 a cup of crushed almonds 1 cup of brown sugar 1 tablespoon of butter Cake: 2 cups of flour 2 1/2 cups of milk 1/2 a cup of butter 2 teaspoons of vanilla 2 eggs 1 Tablespoon of baking powder 1 teaspoon of salt 1/2 a teaspoon of cinnamon Preheat the oven to 350 degrees F In a small bowl combine the almonds, brown sugar and butter, mix until it resembles course crumbs; set that aside. in a large bowl; cream butter and sugar. Add the vanilla, eggs and milk, continue to mix. Now stir in the cinnamon, salt, baking powder, and flour. Line and grease an 8 inch cake pan, evenly spread the brown sugar mixture, the add the cake batter. Bake the cake for 30-35 minutes or until golden brown. Place a plate over the cake and CAREFULY flip the cake over and allow the cake to cool. 5/28/2019 0 Comments Chocolate Blueberry pie This pie is very succulent and rich, the blueberries paired very well with chocolate. 2 1/2 cups of blueberries 1 Tablespoon of lemon juice 2 (9inch) unbaked pie crusts and plate 1 teaspoon of vanilla 1/4 cup of semi sweet chocolate chips 1/4 teaspoon of cinnamon 1/2 cup of sugar 1 Tablespoon of cornstarch Preheat the oven to 350 degrees F Rinse the blueberries, then set them a into a large bowl. Now combine cinnamon, and cornstarch, then set it aside. In a sauce pan, over medium heat stir in lemon juice vanilla, and sugar. Once the sugar is dissolved, add the blueberries. Using a spoon of a masher, lightly mash the blueberries, give it a quick stir. Now bring it to a boil. Once at a boil, reduce heat to a simmer, and add the chocolate chips. Let the filling simmer until chocolate is melted, stirring to keep it from burning. Then pull it off the heat and set it aside. You are going to roll out the first crust into the pie plate, carefully pour the filling into the crust, and place the second one on top and score the center. Lastly bake for 30-35 minutes or until golden brown. 2/21/2019 0 Comments Chocolate cupcakes If your not real big into sweet this cupcake is for you, and the frosting just gives it that right amount of oomph, sprinkles are optional. 1/4 cup of unsweetened cocoa 2 1/2 cups of flour 1 Tablespoon of brewed coffee: chilled 2 teaspoons of vanilla 1/2 cup of sugar 1/4 cup of brown sugar 1/4 cup of milk 3 eggs beaten 1 Tablespoon of sour cream 1 Tablespoon baking powder 1/2 cup of butter 2 (8 oz.) cans of frosting Preheat the oven to 350degrees F In a large bowl, cream the butter, sugar, and sour cream. Mix in the coffee, vanilla, eggs, and milk. In a medium bowl, combine flour, cocoa powder, baking powder, and salt. Now pour the flour mixture into the wet mixture. Pour batter into cupcake liners and bake for 15 minutes or until done in the middle. In a large mixing bowl; combine butter, milk, eggs and vanilla. Then add flour, baking powder, cocoa, both sugars, and salt. Mix together, fold in coconut. Pour into a 13x9 greased pan. and bake for 30-35 minutes or until done in the middle. Topping 1 1/2 cups mini marshmallows 4 Tablespoons flour 1 Tablespoon butter 2 cups milk 1/4 teaspoon salt 1 cup sugar 1 teaspoon vanilla 1/3 cup of cocoa unsweetened Pour marshmallow over cake as soon as it comes out of the oven, set it aside. In a medium sauce pan combine all of the ingredients and cook over medium-high heat until it starts to thicken. In a medium bowl, combine flour, baking soda, and salt. In a large bowl cream butter and sugar; now add the eggs, vanilla, and condensed milk, and continue to mix. Pour in the flour mixture a cup at a time until combined. Add eggs and vanilla and continue to mix. Add flour, and baking soda. Fold in oatmeal, cranberries, and blueberries. Scoop into a piping bag, and pipe rectangle like shapes onto a lightly greased baking sheet. Bake for 10-12 minutes or until lightly browned. 2/12/2018 0 Comments Preacher CakeThis moist piece of heaven is so sweet and savory. 2 ½ cups of flour 1 ½ cups sugar ½ cup sour cream 1 cup orange juice 2 teaspoons baking soda ½ cup sweetened coconut flakes 2 teaspoons of vanilla ½teaspoon cinnamon 1 teaspoon salt 1 cup butter 2 eggs 6-8 oz.. cream cheese frosting Pre heat oven to 350 degrees F, grease a 13x9 pan. In a medium bowl combine flour, salt, baking soda, and cinnamon; set aside. In a large bowl cream butter, sugar, and sour cream. Add eggs, vanilla, and orange juice; continue to mix. Using one cup full at a time add flour mixture to the sugar mixture; stir until combined. Then fold in the coconut flakes. Pour in to your greased pan and bake for 45 minutes or until golden brown.
